A quick, easy to make, simple Sabzi (No Onion-No Garlic). The best part is that it uses the Watermelon rind which is generally discarded, even though it is rich in minerals, vitamins and fiber.
I regularly make Dosas using the rind, but tried this Sabzi a couple of times.. Turned out nice and goes well with Rotis and Paranthas.
Here is the Recipe for the Sabzi.
Ingredients :
2 cups of the white portion of Watermelon cubed *
2 tsps Oil
1 tsp Jeera (Cumin seeds)
½ tsp Heeng (Asafoetida)
A sprig of fresh Kadi pattas (Curry leaves)
3 Green chillies (finely chopped)
¼ tsp Haldi (Turmeric) powder
1 tsp Kashmiri Mirch (Red Chilli) powder
1 tsp Dhania (Coriander) powder
½ tsp Jeera (Cumin) powder
½ tsp Garam Masala powder (optional)
¼ tsp Amchoor (Dry Mango) powder
½ tsp Gur (Jaggery)
½ cup water
Salt to taste
Method :
*Remove the green skin of the watermelon (after removing the red sweet portion) and chop the white portion (rind) into cubes.
Heat oil in a pan. Add Jeera and sauté. Next, add the Heeng, Kadi pattas and Green chillies. Sauté for about 15 seconds.
Add Haldi powder and stir. Add the Watermelon rind cubes and sauté. Cover and cook for 5 minutes.
Next goes in the Kashmiri Mirch powder, followed by Dhania powder and Jeera powder.
Add salt to taste. Add the water and stir. Cook covered till done and the sabzi is almost dry.
Sprinkle the Garam Masala powder and Amchoor powder. Stir well. Add a little Jaggery and mix. Done!!
Garnish with Coriander leaves and serve hot with Rotis or Paranthas.
