My little one loves soups, her favorite being Tomato Soup. I try to make a variety of soups for her as it is a nutritious option loaded with the goodness of different veggies.
One such soup is this Mixed Vegetable Soup which is as tasty as it is filling. This soup is ideal for cold evenings and makes for a complete and wholesome meal for kids. Spice levels can be adjusted as per requirement and choice.
Here’s the recipe.
2 cups finely chopped vegetables ( I used French beans, carrots and capsicum)
1 cup sweet corn boiled
1/2 cup peas
1 big onion finely chopped
2 green chillies finely chopped
1 inch piece ginger peeled and grated
2 cloves of garlic minced
Red Chilli sauce, Tomato Sauce, Soya sauce, Red Chilli flakes to taste
2 tbsp Cornflour dissolved in 1/2 cup cold water
Salt to taste
1 tsp Butter
Heat the butter and sauté the ginger, green chillies and garlic till light brown. Add the onions and sauté till the onions are translucent. Add the chopped veggies, corn and peas and stir fry in high heat for 2-3 minutes.
Once the vegetables are a little crunchy, add the chilli flakes, sauces and salt to taste and mix well. Add 4 cups of water and boil on a medium flame. Once the vegetables are done, add the cornflour slurry (mix the slurry well before adding to avoid lumps) to the soup and stir. The soup will start thickening. Bring to the required consistency and serve hot, garnished with finely chopped coriander leaves.
