Today, I have a family favorite to share with you and it is a delicious Paratha (Indian flatbread) filled with the goodness of Paneer (Cottage Cheese).
This yummy Paratha is protein-rich and makes for a hearty breakfast or brunch and goes well with Curd or Boondi Raita (fried savoury Gram flour drops mixed in Curd with some tangy Chaat Masala) and some Aam ka Achaar (Mango Pickle).
The last time I made it for lunch, I paired it with Methi (Fenugreek) Sabzi, Kale Chane (Brown chickpeas) and Pickle.
Here’s the recipe with some step-by-step pictures 🙂
Ingredients :
For the dough :
2 cups Wheat flour
1tsp oil
Salt to taste
Water to knead the dough
For the stuffing :
1 cup fresh Paneer (Cottage Cheese) crumbled
2 cubes Processed cheese grated (I used Amul)
2 Green chillies (chopped)
1 tsp Kashmiri Mirch (Red chilli) powder
3/4 tsp Chat Masala
2 tsp Coriander leaves chopped
Ghee / Butter to toast the Parathas
Salt to taste
Method :
For the dough :
Mix all the ingredients and knead well to get a soft pliable dough.
Keep the dough aside for 10-15 minutes. Meanwhile, make the stuffing.
For the stuffing :
Mix all ingredients well and keep aside.
To make the Paratha, pinch out a fairly big piece of dough.
Dust the dough with dry flour and roll it into thick Roti. Place the stuffing in the centre of the Roti and fold the edges and bring them together (like we do for Modaks). Flatten the top and seal the edges well so that the stuffing does not spill out.
Dust the dough and gently roll into a Paratha of medium thickness.
Heat a Tawa and place the Paratha on the Tawa. Flip after about 30 seconds.
Cook in the other side too on a medium flame and gently press the Paratha with a spatula so that it puffs up.
Cook on both sides and apply a little Ghee/ Butter. Serve hot.
Once done, serve the Paratha hot.
