The last couple of months were quite hectic for me, with my little one being under weather and her exams going on.
Last week, I tried an experiment and made a healthy cake using Jowar/Sorghum. Jowar is a gluten free millet and is extremely healthy. Though I added Rawa in this cake, you can try it without Rawa too for a gluten-free version.
Instead of Sugar, I used Kakvi, which is a concentrated syrup derived during the process of making Jaggery. You can substitute Kakvi with regular Sugar / Jaggery too.
Here is the recipe.
Ingredients :
1 cup Jowar flour
4 tbsp Rawa
1/2 to 3/4 cup Kakvi (you can substitute with powdered broken / white sugar or Jaggery powder – quantity varying as per sweetness required)
1/2 cup Curd
1/4 cup Oil
1/2 tsp cardamom powder
1 tsp Baking powder
A pinch of Baking soda
Milk ( optional – in case the batter is too thick. I did not use)
Method :
Preheat oven at 180 degrees Celsius.
Mix the wet ingredients ( except milk) and combine well. If using sugar, mix it with wet ingredients.
Sieve the flour along with the Baking powder and Baking soda.
Add the flour to the wet ingredients in batches and mix gently to remove all lumps. Add the Rawa and Cardamom powder at this stage and mix.
In case the batter is too thick, you can add a couple of teaspoons of milk. I did not need to use it.
Grease and dust a cake tin. Pour the batter into the tin and tap gently to remove the air bubbles.
Bake at 180 degrees Celsius for about 35 minutes or till done. Do keep a check after 30 minutes to see if it is done.
Cool and slice the cake. Enjoy with a cup of coffee or tea.
