I simply love to have something to munch on with my Tea/Coffee. Rather than indulging in store bought goodies, I try to bake or make those goodies at home so that the hygiene and health quotient is in my hands.
Yesterday as I was checking my pantry before I prepared my shopping list, I found some items which were leftover in a small quantity and needed replenishment. I tried out a simple cake using these items.
This was a simple Tea cake which was delicious and moist with a soft crumb. We enjoyed the cake with a hot cup of Tea on a rainy weekend 🙂
Here is the recipe.
Ingredients  :
1 cup Maida (All Purpose Flour)
3/4 cup Milk
1/4 cup Milk Powder
1/3 cup Butter
1/2 cup + 2 tbsp Powdered Sugar
1 tsp Pineapple essence
1 tsp Baking Powder
1/2 tsp Baking Soda
Method    :
Preheat Microwave Oven on Convection mode at 180 Degrees Celsius.
In a bowl, whisk the Butter and Sugar till smooth. Add Milk, Milk powder and Pineapple essence. Whisk well.
Add the Flour, Baking powder and Baking soda and fold it gently. Mix well to get a lump free batter.
Pour the batter in a greased and dusted Cake tin and tap the tin to release air bubbles.
Bake at 180 Degrees Celsius for about 40 minutes or till done. Cool, slice and serve with Tea/Coffee.
