Hello!!  I am back with a healthy and delicious meal which can be a quick dinner or a filling snack box option.

Yummy and healthy Roti Wraps and Sandwiches filled with the goodness of Spinach and Cottage Cheese. Easy to make, this delicious filling can be made ahead of time and assembled in a jiffy.

An ideal way to get kids to eat Spinach and protein-rich Cottage cheese.

Ingredients :

2 bunches Spinach, washed, cleaned and finely chopped
2 Onions, finely chopped
5 cloves garlic, finely chopped
2 green chillies, finely chopped
200 gms Paneer, crumbled coarsely
Oregano and Chilli Flakes to taste
Salt to taste
2 tbsp Processed cheese, grated
1 tbsp oil

Method     :

Heat oil in a pan. Add green chillies, garlic. Saute for a couple of minutes. Add the onions and saute until pinkish. Do not let it brown. Add spinach and cover the pan for 2-3 minutes. After the spinach releases water, add salt to taste and cook till almost done. Add Cottage cheese and mix. Sprinkle oregano, chilli flakes and mix well. Add grated cheese and mix. Done.. you can keep this stuffing aside till you have to assemble the wrap or sandwich.

Stuff this mix in the centre of Roti or spread it on a slice of bread. Add some tomato ketchup on it and fold the Roti from both sides. In case of sandwich, cover it with another slice of bread.

Toast the wrap or sandwich on a Tawa with a dab of butter or oil till it is crisp and done. Serve hot.
