Butterscotch is a favorite flavour for many people whom I know. Though I am not quite fond of this flavour, I tried out this simple cake using some Butterscotch syrup which we picked up from Mahabaleshwar a few months back.
The recipe is very simple and the cake had a mild butterscotch flavour and was moist and light. In short, perfect for Tea / Coffee time !!
Ingredients :
1 cup Maida (All Purpose flour)
3 tbsps Cornflour
4 tbsps Milk Powder
3/4 tsp Baking Powder
1/4 tsp Baking Soda
3/4 cup Milk
1/3 cup Oil
3 tbsps Butterscotch syrup (Mapro)
3/4 cup Brown Sugar
Method :
Preheat the Microwave oven on Convection mode @180 degrees Celsius.
Grease a cake tin and dust with flour and keep it ready.
Sieve both flours, milk powder, baking powder and baking soda twice, to ensure even mixing.
In another bowl, mix the milk and sugar with a whisk till the sugar dissolves. Add the oil and syrup and mix well.
Add the dry ingredients to the milk and sugar mixture in two or three batches and mix well.
Pour the batter in the cake tin and tap gently to remove air bubbles.
Bake @180 degrees Celsius for about 35 – 40 minutes till done. Let the cake cool down a bit before serving.
